Cookies and CREAM...

With all this time on my hands what is there to do?

Well there is all the boring stuff: paperwork, report writing (which I am procrastinating with), attending physio and check ups...

Then there is the better (fun isn't quite the right word): watching movies (when I probably should be doing some productive church reading), applying for uni and oh yes... BAKING!

I LUV cookies and cream. Cookies and cream ice-cream, Oreo biscuits dunked in milk, cookies and cream truffles... I found these cookies and cream brownies at the BP petrol station and New World sell them too... They are sooo good! I am constantly reminded that Maaori's are addicted to 3 things... (however, I am sure there are more)... Cigarettes (yeah, not me), salt and cream! Yeah, I totally LUV cream, so no wonder I like cookies and cream!

Anywho, I always seem to get off topic somehow... so on the weekend, I decided to google some recipes to make my own cookies and cream brownies because they are a lil pricey and in my current state, there's no way I can drive down town... so why don't I just make my own?

Well, the first recipe I tried was more like a baked cheese cake slice... the picture on the net looked just like the ones I eat, but they just weren't the right taste and texture... lucky for me, my family love em. So then today, I just had to look for another recipe... so now I have trialled my second recipe. Frosting is great, brownie recipe I used is average, needs to be a bit richer. So next time, I will trial a different brownie recipe. Trial and error works... now who is hungry and wants to help me eat these?!

Recipe

So it's easy as... Make a batch of your favorite choc brownies... if you like, you can crush 8 oreo's and mix into to brownie mix before putting into baking tray!

Frosting:
3 cups icing sugar
6 Tablespoons butter at room temp
4 Tablespoons cream
Mix these ingredients. It is quite thick. Add a little more cream if you like, but not too much. 
Then mix in 10 crushed oreo's into frosting. Ice the brownie once it has cooled, then put into the fridge for the frosting to set.

Had a taste and they are ok. Need to play around with the recipe a bit more.

If anyone has a really nice brownie recipe, please throw it my way! The brownie I made for this was ok, not exactly "the best ever brownie" like the recipe said!!!
